Ooh la la! Beverley market’s French tarts scoop top award
A FRENCH pastry chef who has been selling his mouthwatering patisseries on Beverley Market in East Yorkshire for 10 years has won a much coveted Good Food Award.
Thierry Condette and his wife Nichola met on a barge on the Loire where he was working as a chef and
she was a housekeeper.
They married and set up home in
her native East Yorkshire where Thierry worked as a pastry chef in various hotel and restaurants before he decided to branch out on his own.
He approached Beverley and
Cottingham market stalwart John Dyson about selling his patisseries on Cottingham Market.
“To be honest I thought they were too up-market for Cottingham, but he sold out on his first day on the market, so it shows what I know,” said John, now the NMTF’s National President.
Thierry soon had a thriving business selling French patisseries on Beverley and Cottingham markets and eight years ago he moved into a shop near the Beverley market and named the cafe TC Patisseries.
Thierry now bakes all night and Nichola runs the patisserie café. Their eldest son, Patrice, 16, serves on the market stall on Saturdays.
All their hard work recently paid off when they discovered out of the blue that they had won a prestigious Good Food Award.
Thierry said: “We knew nothing about the award until we were told we had won it.”
A satisfied customer must have suggested the business for an award and a mystery shopper sampled the patisseries and was impressed by the quality of the offer and the service, Thierry says.

New members or those renewing existing FedInsure policies since March 1st will automatically be moved on to the new and improved policy.
Whatever type of market stall you have, you can now get it protected as the new policy can be tailored to indoor market halls as well as outdoor markets. It also covers the majority of trade lines, including food and produce sellers.
As a trader you should consider protecting your goods and stock. Market traders could be more exposed to theft than retail shops, impacting you more at busy times of

the year, for instance, when you hold more stock. The new policy provides an extra 25 per cent increase in stock cover to accommodate seasonal fluctuations in stock levels.
It’s a good idea to insure against the unexpected, as you never know when you’ll suffer accidental or malicious damage to your stall, counters and stock. The new policy now includes storm, malicious damage, explosions, escaped water damage, and many more eventualities.
The enhanced insurance scheme provides a solution that is more tailored to your specific business needs. You can now select additional cover options that include:
Money: protects your takings as you trade and take it to the bank
Deterioration of stock: covers spoilage to your stock should your refrigeration unit breakdown
Business interruption: if you suffer insured damage which prevents you trading, this cover provides you with income whilst you get back up and running
And don’t forget, we’ve made it easier for you to make a claim. Simply download the NMTF app (see page 33) and follow the details onscreen.

big surprise and we are really pleased to have been recognised in this way.”
But the honour isn’t going to his head. “Although we now have a shop and cafe, we won’t give up the market. It is the best place to be. Beverley has great footfall. It is so busy every market day and we couldn’t do better than on this market. I would recommend it to anyone,” he said.
